Preparation
- Preheat your oven to 425°F (220°C).
- In a mixing bowl, combine the diced apples, sugar, cinnamon, and lemon juice.
- On a lightly floured surface, unroll the refrigerated pie crusts and cut out circles of dough large enough to fit into the muffin tin’s cups.
- Press each dough circle into the muffin tin cups, allowing a little overhang.
- Fill each crust with the apple mixture, making sure not to overfill.
- Use the leftover dough to create small circles or shapes to cover the tops of your mini pies, cutting small slits for ventilation.
- Whisk the egg in a small bowl and brush it over each top crust.
Baking
- Place the muffin tin in the preheated oven and bake for about 20-25 minutes or until the crusts are golden brown.
- Allow the mini pies to cool for a few minutes before carefully removing them from the muffin tin.
- Serve warm or at room temperature.
Notes
Store leftovers in an airtight container in the fridge for up to three days or freeze for up to two months. Reheat in a preheated oven at 350°F (175°C) for about 10-15 minutes.
