Ingredients
  

For the Apple Filling
  • 2 cups apples, peeled and diced Any variety of apples can be used.
  • 1 cup sugar Adjust for sweetness as desired.
  • 1 teaspoon cinnamon Add more for extra flavor.
  • 1 tablespoon lemon juice Prevents apples from browning.
For the Crust
  • 1 package refrigerated pie crusts Look for Halal-certified brands.
  • 1 large egg For egg wash.
  • to taste Flour For dusting.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine the diced apples, sugar, cinnamon, and lemon juice.
  3. On a lightly floured surface, unroll the refrigerated pie crusts and cut out circles of dough large enough to fit into the muffin tin’s cups.
  4. Press each dough circle into the muffin tin cups, allowing a little overhang.
  5. Fill each crust with the apple mixture, making sure not to overfill.
  6. Use the leftover dough to create small circles or shapes to cover the tops of your mini pies, cutting small slits for ventilation.
  7. Whisk the egg in a small bowl and brush it over each top crust.
Baking
  1. Place the muffin tin in the preheated oven and bake for about 20-25 minutes or until the crusts are golden brown.
  2. Allow the mini pies to cool for a few minutes before carefully removing them from the muffin tin.
  3. Serve warm or at room temperature.

Notes

Store leftovers in an airtight container in the fridge for up to three days or freeze for up to two months. Reheat in a preheated oven at 350°F (175°C) for about 10-15 minutes.
