Preparation
- In a medium pot, bring water to a boil and add the ramen noodles. Cook according to package instructions (usually around 3-4 minutes), then drain and set aside.
- In the same pot, pour in the vegetable broth and bring to a simmer over medium heat.
- Add the miso paste and peanut butter to the simmering broth. Whisk until they are fully dissolved and combined.
- Stir in the soy sauce and sesame oil for added depth.
- Add the mixed vegetables to the pot and cook for about 3-5 minutes, until tender.
- Add the cooked ramen noodles back to the pot and stir until heated through.
- Serve hot, garnished with chopped green onions and sesame seeds.
Notes
For substitutions, tahini can be used instead of miso paste. Vegetables can be varied according to preference.
