  • 2 packs ramen noodles
  • 4 cups vegetable broth
  • 2 tablespoons miso paste
  • 2 tablespoons peanut butter
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 cup mixed vegetables (e.g., carrots, bell peppers, broccoli)

Method
 

Preparation
  1. In a medium pot, bring water to a boil and add the ramen noodles. Cook according to package instructions (usually around 3-4 minutes), then drain and set aside.
  2. In the same pot, pour in the vegetable broth and bring to a simmer over medium heat.
  3. Add the miso paste and peanut butter to the simmering broth. Whisk until they are fully dissolved and combined.
  4. Stir in the soy sauce and sesame oil for added depth.
  5. Add the mixed vegetables to the pot and cook for about 3-5 minutes, until tender.
  6. Add the cooked ramen noodles back to the pot and stir until heated through.
  7. Serve hot, garnished with chopped green onions and sesame seeds.

Notes

For substitutions, tahini can be used instead of miso paste. Vegetables can be varied according to preference.
