- Start by washing your vegetables thoroughly. Dice the avocados, cucumber, and cherry tomatoes. Finely chop the red onion.
Mixing Ingredients
- In a large mixing bowl, gently toss the diced avocados, cherry tomatoes, cucumber, and red onion together. Be careful not to mash the avocado too much.
- Crumble the feta cheese over the top of your mixed veggies.
- Drizzle the olive oil and lemon juice over the salad, then sprinkle with salt and pepper. Gently toss everything again until well combined.
- Transfer the salad to a serving dish and garnish with fresh parsley.
