  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup feta cheese, crumbled Can be substituted with goat cheese or omitted for a vegan option.
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

Preparation
  1. Start by washing your vegetables thoroughly. Dice the avocados, cucumber, and cherry tomatoes. Finely chop the red onion.
Mixing Ingredients
  1. In a large mixing bowl, gently toss the diced avocados, cherry tomatoes, cucumber, and red onion together. Be careful not to mash the avocado too much.
  2. Crumble the feta cheese over the top of your mixed veggies.
  3. Drizzle the olive oil and lemon juice over the salad, then sprinkle with salt and pepper. Gently toss everything again until well combined.
  4. Transfer the salad to a serving dish and garnish with fresh parsley.

Notes

This salad is best enjoyed fresh. Store leftovers in an airtight container in the refrigerator for up to 1-2 days. Avoid freezing as it may affect texture.
