  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 can diced tomatoes
  • 1 teaspoon Italian seasoning

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant and translucent, about 3-4 minutes.
  2. Place the chicken breasts into the pot, followed by the chicken broth. Bring the mixture to a boil, then reduce the heat to a simmer.
  3. Stir in the sliced carrots, chopped celery, diced tomatoes, and Italian seasoning. Season with salt and pepper to taste.
  4. Allow the soup to simmer for about 20-25 minutes, or until the chicken is thoroughly cooked. Remove the chicken, shred it, and return it to the pot.
  5. Let the soup simmer for another 5-10 minutes before serving. Taste and adjust seasonings as desired.

Notes

Feel free to swap out vegetables based on what's in your pantry. For added depth of flavor, allow the soup to simmer longer if you have the time. One common mistake is not seasoning enough, so be generous with your salt and pepper to enhance the overall taste. To store, let it cool completely before transferring to an airtight container.
