Preparation
  1. Start by thoroughly washing all the vegetables and fruits.
  2. Carefully peel and dice the ripe mangoes into bite-sized pieces.
  3. Dice the red bell pepper and cucumber to the same size as the mango.
  4. Finely chop the red onion, adjusting the amount based on your taste.
Mixing the Salad
  1. In a large bowl, gently combine the diced mangoes, red bell pepper, cucumber, and red onion.
  2. Squeeze fresh lime juice over the top of the salad.
  3. Sprinkle salt over the salad to taste.
  4. If using, chop some fresh cilantro and add it as garnish.
  5. Serve immediately or refrigerate for about 30 minutes to let the flavors meld together.

Notes

For the best flavor, prepare this salad just before serving. If mangos aren’t available, considering using ripe papaya or peaches. Avoid overmixing to prevent mushiness.
