Preparation
- Preheat your panini press or skillet to medium heat.
- Lightly brush one side of each slice of bread with olive oil.
- On the un-oiled side of one slice, layer cheese, tomato, and spinach.
- Sprinkle with salt and pepper.
- Top with the other slice of bread, oiled side facing out.
Cooking
- If using a panini press, place the sandwich inside and grill for about 5 minutes.
- If using a skillet, press down on the sandwich with a spatula, grilling for about 3-4 minutes on each side.
Serving
- Once cooked, let it rest for a minute, then slice in half and enjoy.
Notes
Store leftovers in an airtight container in the fridge for up to 2 days. For freezing, wrap ungrilled paninis tightly in plastic wrap and they can last for up to a month. Reheat in a skillet or toaster oven to maintain crunch.
