Ingredients
  

Bread and Cheese
  • 2 slices slices of your favorite bread (sourdough, whole wheat, or ciabatta) Choose your preferred type of bread.
  • 2 slices slices of cheese (cheddar, mozzarella, or a cheese of your choice) Feel free to mix cheeses for more flavor.
Vegetables and Seasoning
  • 1 medium medium tomato, sliced Enhances freshness and flavor.
  • 1 handful fresh spinach Use any leafy greens you prefer.
  • 1 tablespoon olive oil For brushing on bread.
  • to taste Salt and pepper Adds flavor to the sandwich.

Method
 

Preparation
  1. Preheat your panini press or skillet to medium heat.
  2. Lightly brush one side of each slice of bread with olive oil.
  3. On the un-oiled side of one slice, layer cheese, tomato, and spinach.
  4. Sprinkle with salt and pepper.
  5. Top with the other slice of bread, oiled side facing out.
Cooking
  1. If using a panini press, place the sandwich inside and grill for about 5 minutes.
  2. If using a skillet, press down on the sandwich with a spatula, grilling for about 3-4 minutes on each side.
Serving
  1. Once cooked, let it rest for a minute, then slice in half and enjoy.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. For freezing, wrap ungrilled paninis tightly in plastic wrap and they can last for up to a month. Reheat in a skillet or toaster oven to maintain crunch.
