Ingredients
  

Main Ingredients
  • 1 cup cooked lentils (preferably green or brown) Ensure they are cooked and cooled.
  • 2 medium carrots, grated
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish Optional for presentation.

Preparation
  1. If using dried lentils, rinse them in cold water and cook in a pot with 2-3 cups of water for about 15-20 minutes until tender. Drain and let cool.
  2. While the lentils are cooking, peel and grate the carrots using a box grater or food processor.
  3. Finely chop the red onion and set aside.
Mixing
  1. In a large mixing bowl, combine the cooked lentils, grated carrots, and chopped onions.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until well combined.
  3. Pour the dressing over the lentil mixture and toss to coat evenly. Garnish with fresh parsley before serving.
  4. Serve immediately or let chill in the fridge for 30 minutes to allow the flavors to meld.

Notes

You can add other veggies like bell peppers or cucumbers for more texture. Cook lentils a day in advance for easier meal prep. Make sure not to overcook the lentils.
