  • 1/2 cup fresh basil, chopped Rinse and pat dry before chopping.
  • 1/4 cup lemon juice Fresh lemon juice preferred.
  • 1/4 cup olive oil
  • Salt and pepper to taste Adjust according to preference.
  • 2 cups mixed greens Any variety of mixed greens can be used.
  • 1/2 cup cherry tomatoes, halved

Method
 

Preparation
  1. Start by shredding your cooked chicken into bite-sized pieces.
  2. Rinse the fresh basil leaves under cold water, pat them dry, and then chop them finely.
Dressing
  1. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
Combine
  1. In a large bowl, combine the shredded chicken, chopped basil, mixed greens, and halved cherry tomatoes.
  2. Pour the lemon dressing over the salad and toss everything gently until well mixed.
  3. Taste and adjust the seasoning with more salt and pepper if necessary.
Serve

Notes

For variety, substitute chicken with grilled shrimp or tofu. Prepare ingredients beforehand for quicker assembly. Avoid over-dressing the salad.
