Ingredients
  

For the crust
  • 1 cup all-purpose flour Can be substituted with gluten-free flour blend.
  • 1/2 cup powdered sugar
  • 1/2 cup butter, softened
For the filling
  • 2 large eggs
  • 1 cup granulated sugar
  • 2 teaspoons lemon zest
  • 1/2 cup fresh lemon juice
  • 1/2 teaspoon baking powder
  • Powdered sugar for dusting Optional garnish.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine all-purpose flour and powdered sugar.
  3. Cut in softened butter until the mixture resembles coarse crumbs.
  4. Press the mixture into the bottom of a greased 8×8-inch baking dish.
Baking the Crust
  1. Bake the crust for about 15 minutes, until lightly golden.
Preparing the Filling
  1. In a bowl, whisk together eggs, granulated sugar, lemon zest, fresh lemon juice, and baking powder until smooth.
Combining and Final Baking
  1. Pour the lemon filling over the pre-baked crust.
  2. Return to the oven and bake for an additional 20-25 minutes, until the filling is set and slightly golden.
Cooling
  1. Allow the bars to cool in the dish for about 30 minutes before cutting into squares.
  2. Dust with powdered sugar just before serving.

Notes

Store in an airtight container in the refrigerator for up to one week. Freeze in a safe container for up to three months. Thaw overnight in the refrigerator and dust with powdered sugar before serving.
