Ingredients
  

Base Ingredients
  • 1 lb Spam or Halal-friendly protein, cubed Feel free to substitute with chicken or beef.
  • 1 cup kimchi, chopped
  • 1 medium onion, sliced
  • 2 cups vegetable broth
  • 1 cup water
Flavoring Ingredients
  • 2 tablespoons gochujang (Korean chili paste)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
Noodles and Topping
  • 1 package instant ramen noodles
  • 1 tofu (optional) Add as a protein option.
  • 1 bunch green onions, chopped For garnish.

Method
 

Preparation
  1. Chop kimchi, slice onion, and cube your chosen protein or tofu.
Sauté
  1. In a large pot over medium heat, add sesame oil and onions. Sauté until onions are translucent.
Add Kimchi and Protein
  1. Stir in chopped kimchi and your choice of protein. Cook for about 5 minutes.
Introduce Broth
  1. Pour in vegetable broth and water, then bring to a steady boil.

  1. Add gochujang and soy sauce, stirring well to combine.
Cook Noodles
  1. Once broth is boiling, add ramen noodles and reduce heat. Cook for 2-3 minutes.
Final Touches
  1. If using tofu, gently stir in before serving.

  1. Ladle stew into bowls, sprinkle with fresh green onions, and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Freeze portions for up to a month.
