Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the graham cracker crumbs, half a cup of sugar, and melted butter. Mix until well combined.
- Press the mixture firmly into the bottom and up the sides of a pie dish to form a crust.
- Bake the crust in the preheated oven for about 8-10 minutes or until it’s golden brown. Remove and let cool.
Filling
- In another bowl, beat the egg yolks lightly.
- Add the sweetened condensed milk and mix well.
- Stir in the key lime juice and lime zest.
- Pour the filling into the cooled crust, spreading it evenly.
Baking
- Return the pie to the oven and bake for 15-20 minutes, or until the filling is set.
- Remove from the oven and let cool to room temperature.
- Cover and place in the refrigerator to chill for at least 3 hours.
Serving
- Top with whipped cream just before serving, and enjoy!
Notes
For a lighter option, consider using low-fat sweetened condensed milk. Avoid overbaking the pie to ensure it is set but not dry. Store leftovers covered in the fridge for up to 3-5 days.
