Ingredients
  

For the crust
  • 1.5 cups graham cracker crumbs
  • 0.5 cups sugar
  • 0.33 cups unsalted butter, melted
For the filling
  • 4 large egg yolks
  • 1 can (14 ounces) sweetened condensed milk
  • 0.5 cups key lime juice
  • 1 teaspoon lime zest
  • to taste whipped cream (for serving) Optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the graham cracker crumbs, half a cup of sugar, and melted butter. Mix until well combined.
  3. Press the mixture firmly into the bottom and up the sides of a pie dish to form a crust.
  4. Bake the crust in the preheated oven for about 8-10 minutes or until it’s golden brown. Remove and let cool.
Filling
  1. In another bowl, beat the egg yolks lightly.
  2. Add the sweetened condensed milk and mix well.
  3. Stir in the key lime juice and lime zest.
  4. Pour the filling into the cooled crust, spreading it evenly.
Baking
  1. Return the pie to the oven and bake for 15-20 minutes, or until the filling is set.
  2. Remove from the oven and let cool to room temperature.
  3. Cover and place in the refrigerator to chill for at least 3 hours.
Serving
  1. Top with whipped cream just before serving, and enjoy!

Notes

For a lighter option, consider using low-fat sweetened condensed milk. Avoid overbaking the pie to ensure it is set but not dry. Store leftovers covered in the fridge for up to 3-5 days.
