Preparation
- In a large mixing bowl, combine the flour, sugar, yeast, salt, cinnamon, and nutmeg. Mix well.
 - In a separate bowl, combine warm milk, melted butter, and eggs. Pour the wet ingredients into the dry mixture and mix until a dough starts to form.
 
Kneading
- Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic. If the dough is too sticky, add a little more flour as needed.
 
First Rise
- Place the dough in a greased bowl, cover it with a damp towel, and let it rise in a warm place for about 1 hour or until doubled in size.
 
Add Fillings
- After the dough has risen, punch it down to release the air. Mix in the raisins and candied citrus peel if using.
 
Shape the Buns
- Divide the dough into 12 equal pieces and shape them into balls. Place them on a greased baking tray, making sure they’re touching slightly.
 
Second Rise
- Cover again and let them rise for another 30 minutes until puffed up.
 
Preheat the Oven
- While the dough is resting, preheat your oven to 375°F (190°C).
 
Create the Cross
- Mix flour with enough water to create a thick paste. Transfer to a piping bag and pipe a cross on each bun.
 
Bake
- Bake in the preheated oven for 15-20 minutes or until golden brown.
 
Glaze
- While the buns are baking, prepare the glaze by mixing icing sugar with a little water until you have a pourable consistency. After the buns are out of the oven, drizzle the glaze over the warm buns.
 
Notes
To ensure your Easy Hot Cross Buns come out perfectly, don’t rush the kneading process and make sure the dough is in a warm environment to help it rise effectively. Store leftovers in an airtight container at room temperature for about 2-3 days, or freeze for up to 3 months.
