Salad Ingredients
  • 2 Honeycrisp apples, diced Keep the skins on for extra crunch.
  • 1 cup lettuce or mixed greens
  • 1/2 cup walnuts, toasted Substitute with pecans or almonds if desired.
  • 1/4 cup crumbled feta cheese Goat cheese can also be used for a twist.
  • 1/4 cup dried cranberries
Dressing Ingredients
  • 2 tablespoons honey
  • 2 tablespoons apple cider vinegar
  • to taste Salt and pepper

Method
 

Preparation
  1. Wash and dry your mixed greens thoroughly.
  2. Dice your Honeycrisp apples into bite-sized pieces.
Toasting Walnuts
  1. In a skillet over medium heat, toast the walnuts for about 5 minutes, stirring occasionally until fragrant.
Making Dressing
  1. In a small bowl, whisk together the honey, apple cider vinegar, salt, and pepper until blended.
Combining Salad
  1. In a large bowl, toss together the mixed greens, diced apples, toasted walnuts, crumbled feta, and dried cranberries.
Serving
  1. Drizzle the dressing over the salad and toss gently.
  2. Serve immediately for the best flavor and texture.

Notes

Best enjoyed fresh but can be stored in an airtight container for up to 2 days. Add greens just before serving to prevent wilting.
