  • 1 package 1 package (9 oz.) of tortellini (fresh or frozen) Use fresh or frozen tortellini as per availability.
  • 2 tablespoons 2 tablespoons olive oil
  • 1 cup 1 cup fresh herbs (basil, parsley, chopped) Feel free to mix herbs to match your preference.
  • 1 cup 1 cup cherry tomatoes (halved)
  • 1 cup 1 cup mozzarella balls Slice mozzarella balls if desired.
  • to taste Salt and pepper
  • 1 tablespoon 1 tablespoon lemon juice (freshly squeezed) For brighter flavor.

Method
 

Cooking the Tortellini
  1. In a large pot, bring salted water to a boil. Add the tortellini and cook according to package instructions, typically around 3-5 minutes, until they float to the top. Drain and rinse under cold water to stop the cooking process.
Preparing Ingredients
  1. While the tortellini is cooking, chop your fresh herbs, halve the cherry tomatoes, and slice the mozzarella balls if needed.
Combining Ingredients
  1. In a large mixing bowl, add the cooked tortellini, olive oil, herbs, cherry tomatoes, and mozzarella. Season with salt and pepper to taste.
Dressing the Salad
  1. Drizzle the lemon juice over the salad and give everything a gentle toss until combined. Remember—no need to rush; enjoy the process!
Final Touch
  1. Have a little taste test and adjust the seasoning if necessary. Serve immediately or let it chill in the refrigerator for about 30 minutes to allow the flavors to meld.
