Preparation
- Rinse the halibut fillets under cold water and pat them dry with paper towels.
- In a small bowl, combine olive oil, lemon juice, minced garlic, thyme, parsley, salt, and pepper.
- Place the halibut fillets in a shallow dish or a resealable bag. Pour the marinade over the fish, ensuring each fillet is well coated. Let it marinate for at least 10 minutes.
Cooking
- Heat a non-stick skillet over medium-high heat. Once hot, place the marinated halibut fillets in the skillet.
- Cook for about 4-5 minutes on each side, or until the fillets are golden brown and flaky.
Serving
- Remove the halibut from the skillet and allow it to rest for a few minutes. Garnish with additional herbs and a squeeze of lemon, and serve with your favorite sides.
Notes
If halibut isn’t available, you can substitute with cod or tilapia. Store leftovers in an airtight container in the refrigerator for 2-3 days or freeze for up to 3 months. Reheat gently over low heat in a skillet.
