  • 1 cup rolled oats
  • 1 cup flour (whole wheat or all-purpose)
  • 1/2 cup brown sugar Can substitute with honey or maple syrup.
  • 1 teaspoon cinnamon Adds warmth and flavor.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup unsweetened applesauce Provides moisture.
  • 1/4 cup coconut oil or butter (melted) Use coconut oil for a healthier option.
  • 1 teaspoon vanilla extract Enhances flavor.
Mix-Ins
  • 1 cup diced apples Fresh apples for best flavor.
  • 1/4 cup walnuts or pecans (optional) Add for crunch.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the rolled oats, flour, brown sugar, cinnamon, baking soda, and salt. Whisk these together until well blended.
  3. In a separate bowl, mix the applesauce, melted coconut oil (or butter), and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients. Stir in the diced apples (and nuts if using) until everything is evenly combined.
  5. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on a baking sheet lined with parchment paper, leaving some space between each.
Baking
  1. Bake in your preheated oven for 12-15 minutes or until the edges are lightly golden.
  2. Once done, allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
