Ingredients
  

For the Broth
  • 4 cups beef broth
  • 1 lb Halal beef (sliced thinly) Use tender cuts like sirloin or flank.
  • 1 onion onion (sliced)
  • 1 inch piece ginger (sliced)
  • 2 pieces star anise Can substitute with cardamom if preferred.
  • 1 stick cinnamon stick
  • 3-4 cloves cloves
  • 2 tbsp fish sauce Adjust to taste.
For Serving
  • 8 oz rice noodles Cook according to package instructions.
  • 2 pieces green onions (chopped)
  • 1 cup bean sprouts
  • 1 lime lime (cut into wedges)
  • to taste pieces fresh basil leaves

Method
 

Prepare the Broth
  1. In a large pot, combine the beef broth, sliced onion, ginger, star anise, cinnamon stick, and cloves. Bring it to a gentle boil over medium-high heat. Once boiling, reduce the heat and let it simmer for about 15-20 minutes.
Cook the Noodles
  1. While the broth is simmering, bring a separate pot of water to boil. Add the rice noodles and cook according to the package instructions, usually about 3-5 minutes. Drain and rinse with cold water.
Add the Beef
  1. After the broth has simmered, add the thinly sliced Halal beef and let it cook for about 2-3 minutes.
Season the Broth
  1. Stir in the fish sauce and adjust seasoning as desired.
Assemble Your Bowls
  1. To serve, place a portion of the cooked noodles into each bowl and ladle the hot broth with beef over them. Top with fresh basil, bean sprouts, green onions, and lime juice.

Notes

Store leftovers with broth and noodles separately in airtight containers for 3-4 days. Freeze broth for longer storage. Reheat broth and add noodles before serving to maintain texture.
