  • 1 pound ground turkey
  • 2 medium zucchinis, sliced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup diced tomatoes (fresh or canned, drained)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) to prepare for the baking process.
  2. In a large skillet over medium heat, add a drizzle of olive oil. Once heated, add the chopped onion and minced garlic. Sauté until the onions are translucent, about 3-4 minutes.
  3. Add the ground turkey to the skillet. Break it apart with a spatula and cook until it’s evenly browned and no longer pink, approximately 5-7 minutes. Season with salt, pepper, and Italian seasoning.
  4. In a large baking dish, layer half of the sliced zucchini on the bottom. Next, spread the cooked turkey mixture evenly over the zucchini. Pour the diced tomatoes over the turkey layer, and then layer the remaining zucchini slices on top.
  5. Finally, sprinkle the shredded cheese generously over the top of the casserole.
  6. Place the casserole in the preheated oven and bake for approximately 25-30 minutes, or until the cheese is bubbly and slightly golden.
  7. Once baked to perfection, remove it from the oven and let it cool for a few minutes before serving. Enjoy!

Notes

Consider substituting ground turkey with ground chicken or beef. You can also add other vegetables such as bell peppers or spinach for added nutrition. Experiment with different cheese types for unique flavors.
