  • 2 medium zucchinis
  • 1 pound ground beef
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 small onion, chopped
  • 2 cloves garlic, minced

  • 1 drizzle Olive oil for cooking

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis in half lengthwise and scoop out the seeds to create a cavity.
Cooking
  1. In a skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and minced garlic.
  2. Cook until fragrant and softened.
  3. Add the ground beef to the skillet, season with salt and pepper, and brown completely.
  4. Mix in the marinara sauce and let simmer for about 5 minutes.
Assembly
  1. Spoon the ground beef mixture into the hollowed-out zucchinis.
  2. Top with shredded mozzarella cheese.
Baking
  1. Place the baking dish in the preheated oven and bake for about 25 minutes.
  2. Serve once cooled slightly.

Notes

For a meat alternative, use ground chicken or lamb. Store leftovers in an airtight container for up to three days or freeze for three months. Reheat in the oven to maintain texture.
