  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

  • 1 cup plain Greek yogurt
  • 1/2 cup milk
  • 1 large egg
  • 2 tablespoons melted butter plus extra for cooking

Preparation
  1. Gather your ingredients: Make sure you have all your ingredients ready.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  3. In a separate bowl, mix the Greek yogurt, milk, egg, and melted butter until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently stir until just combined; a few lumps are okay.
Cooking
  1. Preheat a non-stick griddle or frying pan over medium heat and lightly grease it with butter.
  2. Scoop about 1/4 cup of the batter onto the griddle for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  3. Flip and cook for another 1-2 minutes until golden brown.
  4. Remove from the griddle and serve immediately with your favorite toppings.

Notes

For a complete meal, pair pancakes with crispy bacon, a fresh fruit salad, or a side of yogurt. Avoid overmixing the batter for fluffier pancakes.
