Ingredients
  

Filling Ingredients
  • 4 large large eggs
  • 1/4 cup milk
  • 1 cup cooked and crumbled halal breakfast sausage
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup diced bell peppers
  • 1 cup diced onions
Wrap and Serve
  • 8 large flour tortillas
  • Salt and pepper to taste
  • Salsa (optional, for serving) Great for topping!

Method
 

Prepare the Filling
  1. In a large mixing bowl, whisk together the eggs and milk. Season with salt and pepper.
  2. In a skillet over medium heat, add the crumbled halal breakfast sausage. Cook until browned and fully cooked through (around 5–7 minutes).
  3. Add the diced bell peppers and onions to the sausage, cooking for an additional 3–5 minutes, until the veggies have softened.
Scramble the Eggs
  1. Pour the egg mixture into the skillet. Stir gently while the eggs cook until fluffy and just set. This should take about 2–3 minutes.
Assemble the Burritos
  1. Lay a large tortilla on a flat surface. Spoon a portion of the filling onto the center of the tortilla.
  2. Top with a generous sprinkle of shredded cheese.
  3. Fold the sides over the filling and then roll from the bottom up to close the burrito tightly.
Freeze or Serve
  1. For immediate consumption, heat in a skillet for 3–4 minutes per side until crispy and golden.
  2. To freeze, wrap each burrito tightly in foil or plastic wrap, then place in a freezer-friendly bag. Label and store in the freezer.

Notes

These burritos can be customized with various substitutions, including different proteins or veggies. They can stay fresh in the freezer for up to 3 months. Reheat in the microwave for 1–2 minutes or in a skillet for 5–7 minutes.
