Prepare the Filling
- In a large mixing bowl, whisk together the eggs and milk. Season with salt and pepper.
- In a skillet over medium heat, add the crumbled halal breakfast sausage. Cook until browned and fully cooked through (around 5–7 minutes).
- Add the diced bell peppers and onions to the sausage, cooking for an additional 3–5 minutes, until the veggies have softened.
Scramble the Eggs
- Pour the egg mixture into the skillet. Stir gently while the eggs cook until fluffy and just set. This should take about 2–3 minutes.
Assemble the Burritos
- Lay a large tortilla on a flat surface. Spoon a portion of the filling onto the center of the tortilla.
- Top with a generous sprinkle of shredded cheese.
- Fold the sides over the filling and then roll from the bottom up to close the burrito tightly.
Freeze or Serve
- For immediate consumption, heat in a skillet for 3–4 minutes per side until crispy and golden.
- To freeze, wrap each burrito tightly in foil or plastic wrap, then place in a freezer-friendly bag. Label and store in the freezer.
