Ingredients
  

Wet Ingredients
  • 1 cup sourdough starter (active and bubbly) Make sure it's bubbly for best results.
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter Melt before adding.
Dry Ingredients
  • 1 cup all-purpose flour Sifted for best results.
  • 2 tablespoons sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Preparation
  1. In a large mixing bowl, combine the sourdough starter, milk, egg, and melted butter. Whisk until well combined and smooth.
  2. In a separate bowl, sift together the flour, sugar, baking soda, and salt. Gradually add this mixture to the wet ingredients, gently folding until just combined. Don’t over-mix; a few lumps are perfectly fine!
Cooking
  1. Heat a non-stick skillet or griddle over medium heat. Lightly grease it with butter or oil.
  2. Pour about ¼ cup of pancake batter onto the skillet for each pancake. Cook for 2-3 minutes until you see bubbles forming on the surface. Flip and cook for another 1-2 minutes until golden brown.
  3. Remove from the skillet and keep warm in a low oven while you cook the rest. Serve with your favorite toppings.

Notes

Ensure that your sourdough starter is bubbly and active for the pancakes to rise and be ultra-fluffy. Avoid overmixing the batter to prevent dense pancakes.
