Preparation
- Start by washing and chopping your chosen mixed vegetables into bite-sized pieces.
- In a large bowl, mix the chopped vegetables with salt, optional sugar, and spices.
Fermentation
- Transfer the mixed vegetables into a clean, sterilized jar and pack them down tightly.
- Add enough water to cover the vegetables and seal the jar loosely.
- Place the jar in a cool, dark place at room temperature for 3–5 days.
Storage
- After 3 days, taste your fermented veggie stew. If it's tangy enough, move it to the refrigerator.
- Store in the refrigerator for up to 2–3 weeks or freeze in an airtight container.
Notes
Avoiding Spoilage: Keep an eye on the water level in your jar to ensure vegetables remain submerged. Discard any batches with mold.
