Ingredients
  

Mixed Vegetables
  • 2 cups mixed vegetables (carrots, cabbage, daikon, etc.) Feel free to get creative with your veggie choices!
Fermentation Ingredients
  • 1 tablespoon salt Helps to draw out moisture for fermentation.
  • 1 tablespoon sugar (optional) Can be added for a sweeter flavor.
  • 1 teaspoon spices (like garlic, ginger, or chili flakes) Choose your favorite spices for added flavor.
  • as needed N/A Water Add enough water to cover vegetables in the jar.

Method
 

Preparation
  1. Start by washing and chopping your chosen mixed vegetables into bite-sized pieces.
  2. In a large bowl, mix the chopped vegetables with salt, optional sugar, and spices.
Fermentation
  1. Transfer the mixed vegetables into a clean, sterilized jar and pack them down tightly.
  2. Add enough water to cover the vegetables and seal the jar loosely.
  3. Place the jar in a cool, dark place at room temperature for 3–5 days.
Storage
  1. After 3 days, taste your fermented veggie stew. If it's tangy enough, move it to the refrigerator.
  2. Store in the refrigerator for up to 2–3 weeks or freeze in an airtight container.

Notes

Avoiding Spoilage: Keep an eye on the water level in your jar to ensure vegetables remain submerged. Discard any batches with mold.
