  • 1 pound frozen meatballs Halal-compliant
  • 4 cups beef or chicken broth Use your preferred variety
  • 2 cups diced tomatoes Canned or fresh
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper Season according to preference
  • 2 cups spinach or kale (optional) Add during the last 30 minutes of cooking for extra nutrition

Preparation
  1. Dice the onion, chop the carrots, and chop the celery. Mince the garlic.
Combine Ingredients in the Crockpot
  1. In your crockpot, combine frozen meatballs, diced tomatoes, chopped carrots, chopped celery, diced onion, minced garlic, and Italian seasoning.
Add the Broth
  1. Pour in the beef or chicken broth, ensuring all ingredients are submerged.
Season
  1. Add salt and pepper to taste and stir well to combine.
Cook
  1. Cover and cook on high for 4 hours or on low for 6-8 hours.
Add Greens
  1. If using, add spinach or kale during the last 30 minutes of cooking.
