  • 1 cup all-purpose flour Can substitute with whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

  • 2 eggs eggs Beaten
  • 1 cup sugar Can substitute with coconut sugar
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
Main Ingredients
  • 2 cups dates, chopped Pitted and chopped into similar-sized pieces
  • 1 cup walnuts, chopped

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan with oil or line it with parchment paper.
  3. In a medium-sized bowl, combine all-purpose flour, baking powder, baking soda, and salt. Whisk until evenly mixed.
  4. In a large mixing bowl, beat the eggs and gradually add sugar. Mix until light and fluffy, then stir in vegetable oil and vanilla extract.
  5. Gradually add the dry mixture to the wet mixture and stir gently until just combined.
  6. Fold in the chopped dates and walnuts until evenly distributed.
  7. Transfer the batter into the greased pan, spreading it evenly.
Baking
  1. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Top with powdered sugar or a drizzle of honey for extra flavor. Store leftovers in an airtight container in the refrigerator for up to one week, or freeze for up to three months. Reheat slices in the microwave for 20-30 seconds or in a preheated oven at 300°F (150°C) for 10 minutes.
