Ingredients
  

Dry Ingredients
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup butter, melted
  • 1 cup sugar
  • 2 pieces eggs
  • 1/2 teaspoon vanilla extract
Add-ins
  • 1 cup dates, chopped Make sure they are Halal-friendly.
  • 1 cup walnuts, chopped Can be substituted with pecans or almonds.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking pan with butter or non-stick spray.
  2. In a mixing bowl, combine the flour, baking powder, baking soda, and salt.
  3. In another large bowl, whisk together the melted butter, sugar, and eggs until smooth. Add vanilla extract and stir.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Gently fold in the chopped dates and walnuts until evenly distributed.
Baking
  1. Pour the batter into the prepared baking pan and bake for approximately 30 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Consider topping with vanilla ice cream or a drizzle of honey. Store in an airtight container in the refrigerator for up to five days or freeze for up to three months.
