  • 2 tablespoons rice vinegar

Method
 

Preparation
  1. Start by washing the cucumber and then dicing it into bite-sized pieces. If you’re using frozen edamame, make sure it’s thawed and shelled. Finely chop the red onion and roughly chop the cilantro.
Mix the Base
  1. In a large bowl, combine the diced cucumber, edamame, chopped red onion, and fresh cilantro. Get everything mixed thoroughly; the balance of textures begins here!
