  • Salt and pepper to taste

Preparation
  1. Preheat the Oven: Set your oven to 350°F (175°C).
  2. Mix Ingredients: In a large mixing bowl, combine the almond flour, shredded mozzarella cheese, and Italian seasoning. Mix well.
  3. Add Eggs: Crack the eggs into the bowl and mix until all ingredients are fully combined. This mixture should look thick and creamy.
  4. Prepare the Baking Dish: Grease an 8x8 inch baking dish or any similar-sized dish with a bit of oil.
  5. Combine Marinara & Veggies: In another bowl, mix the marinara sauce with the diced bell peppers and black olives. Add a pinch of salt and pepper to taste.
  6. Layer the Mixture: Pour half of the almond flour mixture into the baking dish, spreading it evenly. Then, layer all of the marinara and veggie mix on top. Pour the remaining almond flour mixture over the vegetables, smoothing it out gently.
Baking
  1. Bake: Place the dish in the preheated oven and bake for about 30 minutes or until the top is golden and a toothpick inserted comes out clean.
  2. Cool and Serve: Let it cool for a few minutes before slicing. Enjoy warm!
