Preparation
- Preheat a non-stick skillet over medium heat.
- In a mixing bowl, crack in the eggs and whisk them together until combined. Season with salt and pepper.
- Add one tablespoon of butter to the skillet. Once melted, pour in the scrambled eggs and stir gently. Cook for 3-4 minutes until just set.
- While the eggs cook, slice the croissants in half lengthwise. Optionally, toast them lightly for better texture.
- Layer the cooked eggs onto the bottom half of each croissant. Sprinkle with shredded cheese, then top with your choice of halalled protein.
- Place the top half of the croissant on each sandwich and return to the skillet. Cook for another 1-2 minutes on each side until golden and the cheese is melted.
- Remove from the skillet and serve warm with your favorite sides.
Notes
For a dairy-free version, use plant-based cheese or substitute with cooked veggies. Ensure not to overcrowd the skillet when melting cheese to achieve a gooey texture. Store wrapped in aluminum foil in the fridge for up to 3 days or freeze for a month.
