Main Ingredients
  • 1 lb ground beef (halal) Can substitute with ground turkey or omit for a vegetarian option.
  • 1 can black beans, drained and rinsed Make sure to rinse well to reduce sodium.
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 large bell pepper, chopped
  • 2 cups beef broth
Seasonings
  • 1 tsp chili powder
  • 1 tsp cumin
  • to taste salt and pepper

Method
 

Preparation
  1. In a skillet over medium heat, brown the ground beef until it’s fully cooked.
  2. Chop the onion, bell pepper, and mince the garlic.
Cooking
  1. In your crockpot, add the browned beef, chopped onion, bell pepper, minced garlic, black beans, corn, diced tomatoes, tomato sauce, and beef broth.
  2. Sprinkle in the chili powder, cumin, salt, and pepper. Stir everything together until well mixed.
  3. Set your crockpot to low for 6-8 hours or high for 3-4 hours.
  4. Once the cooking time is up, give the soup a good stir, taste, and adjust seasoning if needed.
Serving
  1. Serve hot with your choice of toppings such as diced avocado, shredded cheese, or fresh herbs.

Notes

For best flavor, allow the soup to simmer slowly. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat on the stove or in the microwave, stirring often to ensure even heating.
