  • 2 pounds boneless, skinless chicken breasts
  • 1 packet taco seasoning (about 1 ounce)
  • 1 can diced tomatoes with green chilies (14.5 ounces)
  • 1 can black beans, drained and rinsed (15 ounces)
  • 1 cup corn (fresh, frozen, or canned)
  • 1/2 cup chopped onion (optional) Optional ingredient for added flavor
  • to taste taco shells or tortillas for serving

  • to taste fresh cilantro

Method
 

Preparation
  1. Place the chicken breasts in the bottom of the slow cooker.
  2. Sprinkle the taco seasoning evenly over the chicken.
  3. Pour the can of diced tomatoes with juices, black beans, corn, and chopped onion over the chicken without mixing.
Cooking
  1. Cover the slow cooker and set it on low for 6 to 8 hours, or on high for 3 to 4 hours.
  2. Once cooked, shred the chicken with two forks in the slow cooker and mix with other ingredients.
Serving
  1. Spoon the chicken mixture into taco shells or tortillas and top with your favorite toppings.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat gently on the stove or microwave.
