Preparation
- Place the chicken breasts in the bottom of the slow cooker.
- Sprinkle the taco seasoning evenly over the chicken.
- Pour the can of diced tomatoes with juices, black beans, corn, and chopped onion over the chicken without mixing.
Cooking
- Cover the slow cooker and set it on low for 6 to 8 hours, or on high for 3 to 4 hours.
- Once cooked, shred the chicken with two forks in the slow cooker and mix with other ingredients.
Serving
- Spoon the chicken mixture into taco shells or tortillas and top with your favorite toppings.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat gently on the stove or microwave.
