  • 2 medium medium squash (zucchini or yellow squash)
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 large eggs
  • Cooking spray or olive oil For greasing the baking sheet

Method
 

Preparation
  1. Preheat your Oven to 400°F (200°C).
  2. Wash and slice the squash into even rounds, about 1/4-inch thick.
  3. In a large bowl, mix together breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
  4. In a separate bowl, whisk the eggs until well combined.
Coating
  1. Dip each slice of squash into the egg mixture, then dredge it through the breadcrumb mixture, ensuring it’s fully coated.
  2. For an extra crispy texture, double-dip if desired.
Baking
  1. Spray a baking sheet with cooking spray or brush it with olive oil.
  2. Place the coated squash slices in a single layer on the baking sheet.
  3. Bake for 20-25 minutes, flipping halfway through, until the squash is golden brown and crispy.
Serving
  1. Remove from the oven and allow to cool slightly before serving.

Notes

For a gluten-free option, substitute with gluten-free breadcrumbs. Ensure not to overcrowd the baking sheet to achieve the best texture. Store leftovers in an airtight container for up to 3 days.
