Preparation
- Start by chopping the onion, mincing the garlic, and chopping the spinach.
Cooking
- In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion and sauté until translucent, about 4-5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Pour in the vegetable broth and stir in the Italian seasoning. Bring the mixture to a simmer.
- Add the tortellini to the simmering broth and cook according to the package instructions, usually around 5-7 minutes, until they float to the surface.
- Stir in the heavy cream and chopped spinach. Allow the soup to simmer for an additional 2-3 minutes, just until the spinach is wilted.
- Finally, season with salt and pepper to taste.
Serving
- Ladle the soup into bowls and top with freshly grated Parmesan cheese for an extra burst of flavor. Enjoy with a slice of crusty bread!
Notes
This soup is perfect for meal prep! Leftovers can be stored in an airtight container for up to 3 days. It can be frozen for up to 2 months, just ensure it’s cooled completely before freezing. Add broth or cream when reheating to restore creaminess.
