Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the softened cream cheese and butter. Use a hand mixer or a sturdy wooden spoon to beat them together until creamy and smooth.
- Add the granulated sugar, egg, and vanilla extract, and mix until well blended.
- In another bowl, whisk together the all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
- Using a tablespoon or cookie scoop, place dollops of dough on a baking sheet lined with parchment paper, leaving space in between.
Baking
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack. Dust with powdered sugar, if desired, once they are completely cool.
- Enjoy your cookies with a warm cup of tea or coffee!
Notes
To keep cookies fresh, store in an airtight container at room temperature for up to a week. Cookies can be frozen for up to three months.
