  • 1 cup granulated sugar

  • 1 cup milk
  • 2 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup brown sugar For topping.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9x9 inch baking pan with butter or non-stick spray.
  3. In a medium bowl, whisk together the flour, baking powder, salt, and ground cinnamon. Set aside.
  4. In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  5. Beat in the eggs one at a time, followed by the milk and vanilla extract, mixing well.
  6. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  7. In a small bowl, mix together the brown sugar and a hint of cinnamon for the topping, then sprinkle it over the batter.
Baking
  1. Place the pan in the preheated oven and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let the cake cool for a few minutes before slicing and serving.

Notes

For a nuttier flavor, consider replacing half the flour with whole wheat flour or adding chopped walnuts. Store in an airtight container for up to 3 days, or freeze for up to 3 months.
