Muffin Batter
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 1 large egg
  • 1 tablespoon ground cinnamon
  • 1/4 cup brown sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a muffin tin with cooking spray or line it with muffin liners.
  3. In a mixing bowl, combine all-purpose flour, sugar, baking powder, baking soda, salt, ground cinnamon, and brown sugar. Whisk until well mixed.
  4. In another bowl, whisk together the milk, melted butter, and egg.
  5. Pour the wet mixture into the dry ingredients. Stir gently until just combined.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for about 15-20 minutes, or until a toothpick inserted comes out clean.
  8. Let muffins cool in the tin for a few minutes before transferring them to a wire rack.
  9. Enjoy warm!

Notes

Feel free to substitute regular milk with almond or oat milk and add nuts or dried fruit. Store muffins in an airtight container for up to 3 days or freeze for up to a month.
