Preparation
- Preheat your oven to 350°F (175°C).
- Grease a muffin tin with cooking spray or line it with muffin liners.
- In a mixing bowl, combine all-purpose flour, sugar, baking powder, baking soda, salt, ground cinnamon, and brown sugar. Whisk until well mixed.
- In another bowl, whisk together the milk, melted butter, and egg.
- Pour the wet mixture into the dry ingredients. Stir gently until just combined.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for about 15-20 minutes, or until a toothpick inserted comes out clean.
- Let muffins cool in the tin for a few minutes before transferring them to a wire rack.
- Enjoy warm!
Notes
Feel free to substitute regular milk with almond or oat milk and add nuts or dried fruit. Store muffins in an airtight container for up to 3 days or freeze for up to a month.
