Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
Wet Ingredients
  • 1/2 cup buttermilk Can substitute with milk + lemon juice or vinegar.
  • 1 large egg
  • 2 tablespoons melted butter
Coating
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by lightly greasing it or lining it with muffin liners.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon.
  3. In another bowl, combine the buttermilk, egg, and melted butter. Gently mix until smooth.
  4. Pour the wet ingredients into the bowl of dry ingredients. Stir gently until just combined—don’t overmix.
  5. Divide the batter evenly among the muffin cups, filling each about 3/4 of the way full.
Baking
  1. Place in the preheated oven and bake for approximately 12–15 minutes until the muffins are golden brown and a toothpick comes out clean.
Coating
  1. While baking, mix the sugar and cinnamon in a small bowl for the coating.
  2. Once baked, allow muffins to cool for a few minutes. Then, roll each muffin in the cinnamon-sugar mixture until thoroughly coated.

Notes

For perfect muffins, do not overmix and keep an eye on baking times. Store in an airtight container for up to three days or freeze for up to three months.
