Dry Ingredients
  • 1 cup all-purpose flour Spoon and level for proper measurement.
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
Wet Ingredients
  • 1/2 cup milk Almond milk can be used for a nutty flavor.
  • 1/4 cup vegetable oil Coconut oil can substitute for a tropical hint.
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup melted butter
Coating
  • 1/4 cup sugar
  • 1 tablespoon ground cinnamon

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a muffin tin with non-stick spray or line it with muffin liners.
  2. In a mixing bowl, combine the all-purpose flour, sugar, baking powder, baking soda, salt, and ground cinnamon. Whisk together until evenly mixed.
  3. In another bowl, whisk together the milk, vegetable oil, egg, and vanilla extract until well combined.
  4. Gradually add the wet mixture to the dry ingredients, stirring gently until just combined, ensuring a few lumps remain.
  5. Fill each muffin cup about 2/3 full with the batter.
  6. Bake in the preheated oven for about 10-12 minutes or until a toothpick inserted into the center comes out clean.
  7. While the muffins are baking, mix the 1/4 cup of sugar and 1 tablespoon of ground cinnamon in a shallow bowl.
  8. Once baked, allow the muffins to cool for a minute, dip each muffin in melted butter, and roll in the cinnamon-sugar mixture until well coated.
  9. Serve warm and enjoy your delicious muffins!

Notes

For leftover muffins, store in an airtight container at room temperature for up to 2 days. For longer storage, refrigerate for up to a week or freeze for up to a month. To reheat, microwave or use a toaster oven.
