Preparation
- Preheat the oven to 350°F (175°C) and grease a muffin tin with non-stick spray or line it with muffin liners.
- In a mixing bowl, combine the all-purpose flour, sugar, baking powder, baking soda, salt, and ground cinnamon. Whisk together until evenly mixed.
- In another bowl, whisk together the milk, vegetable oil, egg, and vanilla extract until well combined.
- Gradually add the wet mixture to the dry ingredients, stirring gently until just combined, ensuring a few lumps remain.
- Fill each muffin cup about 2/3 full with the batter.
- Bake in the preheated oven for about 10-12 minutes or until a toothpick inserted into the center comes out clean.
- While the muffins are baking, mix the 1/4 cup of sugar and 1 tablespoon of ground cinnamon in a shallow bowl.
- Once baked, allow the muffins to cool for a minute, dip each muffin in melted butter, and roll in the cinnamon-sugar mixture until well coated.
- Serve warm and enjoy your delicious muffins!
Notes
For leftover muffins, store in an airtight container at room temperature for up to 2 days. For longer storage, refrigerate for up to a week or freeze for up to a month. To reheat, microwave or use a toaster oven.
