Ingredients
  

Vegetable Mixture
  • 1 cup chopped bell peppers
  • 1 cup chopped zucchini
  • 1 cup chopped mushrooms
  • 1/2 cup finely chopped onion
Binding Ingredients
  • 1 cup breadcrumbs
  • 1 each egg (or flax egg for vegan)
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a skillet over medium heat, sauté the chopped bell peppers, zucchini, mushrooms, and onions for 5-7 minutes until they’re soft and fragrant.
  3. In a mixing bowl, combine the sautéed veggies with breadcrumbs, the egg (or flax egg for a vegan option), Italian seasoning, salt, and pepper. Mix well until everything is incorporated.
Cooking
  1. Shape a small amount of the mixture into small patties that will fit on your slider buns.
  2. Place the patties on a parchment-lined baking sheet and bake for 15-20 minutes, flipping halfway through, until golden brown and crisp.
Assembly and Serving
  1. Assemble the sliders by placing each patty on a slider bun and adding your favorite toppings such as avocado, lettuce, or sauces.
  2. Serve warm and enjoy!

Notes

You can swap vegetables based on your preferences. Store leftovers in an airtight container for 3-4 days or freeze for up to a month. Reheat in the oven or air fryer.
