- In a mixing bowl, combine the sautéed veggies with breadcrumbs, the egg (or flax egg for a vegan option), Italian seasoning, salt, and pepper. Mix well until everything is incorporated.
Cooking
- Shape a small amount of the mixture into small patties that will fit on your slider buns.
- Place the patties on a parchment-lined baking sheet and bake for 15-20 minutes, flipping halfway through, until golden brown and crisp.
Assembly and Serving
- Assemble the sliders by placing each patty on a slider bun and adding your favorite toppings such as avocado, lettuce, or sauces.
