Preparation
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Then mix in the vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add this dry mixture into the wet ingredients, mixing on low speed until fully combined.
- Fold in the chocolate chips gently with a spatula if using.
- Drop dough by tablespoonfuls onto ungreased baking sheets, spacing them about 2 inches apart.
Baking
- Bake in the preheated oven for 10-12 minutes, or until the edges are set and centers look soft.
- Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For thicker cookies, chill the dough for about 30 minutes before baking. Store cookies in an airtight container at room temperature for up to a week or freeze for up to three months.
