  • 2 cups cooked, shredded chicken (Halal) Make sure your chicken is Halal-certified.
  • 1 cup shredded cheese (such as Cheddar or Monterey Jack)
  • 4 large flour or corn tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon taco seasoning Or your preferred seasoning blend.

  • to taste diced tomatoes
  • to taste fresh cilantro

Method
 

Preparation
  1. In a mixing bowl, combine the shredded chicken with the taco seasoning until well coated.
  2. Place a tortilla in a preheated skillet over medium heat.
Cooking
  1. Layer half of the tortilla with a generous portion of the seasoned chicken and top it with a handful of shredded cheese.
  2. Fold the tortilla in half, pressing it gently with a spatula.
  3. Cook for about 3-4 minutes or until the bottom is golden brown and the cheese begins to melt.
  4. Flip and cook for an additional 3-4 minutes on the other side.
  5. Repeat the process with the remaining tortillas, chicken, and cheese.
  6. Keep the cooked quesadillas warm in the oven at a low temperature.
Serving
  1. Let them cool for a minute before slicing into wedges.
  2. Serve with your favorite toppings and enjoy!

Notes

For a leaner version, consider using grilled or sautéed vegetables instead of chicken. Keep an eye on the quesadillas to avoid burning, and do not overstuff them for even cooking. You can prep chicken in advance for quicker meals.
