  • 1 lb chicken breast (boneless and skinless)
  • 6 cups chicken broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, peeled and sliced
  • 3 stalks celery, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bag (16 oz) potato gnocchi
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. Start by chopping your onion, carrots, and celery, and make sure your chicken breast is ready for action.
Layering
  1. Place the chicken breast at the bottom of your crockpot. Add chopped onion, garlic, carrots, and celery on top.
Adding Broth and Seasonings
  1. Pour in your chicken broth and sprinkle the thyme and oregano over everything. Season with salt and pepper.
Cooking
  1. Cover your crockpot and set it to low for 6-8 hours or high for 4 hours.
Shredding Chicken
  1. About 30 minutes before serving, remove the chicken and shred it using two forks. Return the shredded chicken to the crockpot.
Finishing Touches
  1. Stir in the gnocchi and heavy cream. Cook for an additional 30 minutes until the gnocchi are tender.
Serving
  1. Ladle the soup into bowls, garnish with fresh parsley, and enjoy your cozy meal!

Notes

If using leftovers, store in an airtight container in the refrigerator for 3-4 days or freeze for up to 3 months. Reheat gently, adding a splash of cream if desired.
