Preparation
  1. Begin by prepping all your ingredients. Slice the chicken breasts, bell pepper, and onion into thin strips.
Cooking
  1. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  2. Add the sliced chicken breasts to the hot oil. Sprinkle the fajita seasoning, salt, and pepper over the chicken.
  3. Stir frequently, cooking for about 5-7 minutes or until the chicken is no longer pink.
  4. Toss in the sliced bell pepper and onion; stir everything together and continue to cook for an additional 5-7 minutes until the vegetables are tender but still crisp.
Serving
  1. While the chicken and veggies are cooking, heat your tortillas in a separate pan or microwave until they are warm and pliable.
  2. Once everything is cooked perfectly, spoon the chicken and veggie mixture onto the warm tortillas. Add your favorite toppings, wrap them up, and enjoy!

Notes

For substitutions, consider using Halal-certified beef or shrimp. Add other veggies like zucchini or mushrooms for extra flavor. Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for 2-3 months. Reheat gently in a skillet for the best texture.
