Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, cooked broccoli, cooked rice, 1 cup of cheddar cheese, cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper. Stir until all ingredients are well mixed.
- Grease a 9x13 inch casserole dish with cooking spray or a little butter. Pour the prepared mixture into the dish, spreading it out evenly.
- Sprinkle the remaining ½ cup of cheddar cheese evenly on top. Optionally, add breadcrumbs on top for extra flavor.
- Place the casserole dish in the preheated oven and bake for about 30 minutes or until it’s heated through and the cheese is golden and bubbly.
- Let it cool for a few minutes before serving.
Notes
You can substitute chicken with shredded turkey or use quinoa or lentils for a vegetarian option. Prepare a day in advance and adjust baking time if refrigerated.
