Casserole Ingredients
  • 2 cups cooked chicken, shredded
  • 2 cups broccoli florets (fresh or frozen)
  • 1 cup cooked rice (white or brown)
  • 1.5 cups cheddar cheese, shredded
  • 1 can cream of chicken soup (or a homemade equivalent)
  • 0.5 cup milk
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • Salt and pepper to taste
  • Breadcrumbs for topping (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, cooked broccoli, cooked rice, 1 cup of cheddar cheese, cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper. Stir until all ingredients are well mixed.
  3. Grease a 9x13 inch casserole dish with cooking spray or a little butter. Pour the prepared mixture into the dish, spreading it out evenly.
  4. Sprinkle the remaining ½ cup of cheddar cheese evenly on top. Optionally, add breadcrumbs on top for extra flavor.
  5. Place the casserole dish in the preheated oven and bake for about 30 minutes or until it’s heated through and the cheese is golden and bubbly.
  6. Let it cool for a few minutes before serving.

Notes

You can substitute chicken with shredded turkey or use quinoa or lentils for a vegetarian option. Prepare a day in advance and adjust baking time if refrigerated.
