Preparation
- Start by washing your veggies and slicing the zucchini and squash into thin rounds.
- Pat the chicken breasts dry with a paper towel and season with garlic powder, onion powder, salt, and pepper on both sides.
Cooking
- In a large skillet, heat the olive oil over medium-high heat.
- Add the chicken breasts and sear them for about 4-5 minutes on each side until golden brown.
- Push the chicken to one side of the skillet and add the sliced zucchini and squash. Cover for 5-7 minutes until they’ve softened and the chicken is cooked through.
Serving
- Remove the skillet from the heat and garnish with fresh herbs. Plate the chicken alongside the veggies, and enjoy!
Notes
For extra flavor, consider pre-seasoning the chicken breasts and marinating them. Substitute seasonal vegetables if desired. Use a meat thermometer for cooked chicken.
