  • 2 pieces boneless, skinless chicken breasts
  • 2 medium zucchinis, sliced
  • 2 medium yellow squashes, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • to taste Fresh herbs (like basil or parsley) for garnish

Method
 

Preparation
  1. Start by washing your veggies and slicing the zucchini and squash into thin rounds.
  2. Pat the chicken breasts dry with a paper towel and season with garlic powder, onion powder, salt, and pepper on both sides.
Cooking
  1. In a large skillet, heat the olive oil over medium-high heat.
  2. Add the chicken breasts and sear them for about 4-5 minutes on each side until golden brown.
  3. Push the chicken to one side of the skillet and add the sliced zucchini and squash. Cover for 5-7 minutes until they’ve softened and the chicken is cooked through.
Serving
  1. Remove the skillet from the heat and garnish with fresh herbs. Plate the chicken alongside the veggies, and enjoy!

Notes

For extra flavor, consider pre-seasoning the chicken breasts and marinating them. Substitute seasonal vegetables if desired. Use a meat thermometer for cooked chicken.
