Ingredients
  

For the crust and filling
  • 1 package refrigerated pie crusts (2 crusts) Use Halal-certified if necessary.
  • 2 cups fresh or frozen cherries (pitted and chopped) Cherries can be substituted with blueberries or peaches.
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 egg for egg wash
  • to taste powdered sugar for serving Optional

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Roll out the pie crusts on a lightly floured surface until thinner.
  3. Cut the crust into small squares (about 3-4 inches) using a sharp knife or pizza cutter.
  4. In a medium bowl, combine the chopped cherries, sugar, cornstarch, vanilla extract, and lemon juice. Mix well to coat the cherries.
  5. Spoon a small amount of the cherry mixture onto one corner of each square, being careful not to overfill.
  6. Fold the dough over to form triangles and press the edges securely to seal. You can use a fork to crimp the edges.
  7. In a small bowl, whisk the egg and brush it over the tops of the bites for a golden finish.
  8. Place the bites on a baking sheet lined with parchment paper and bake for 18-20 minutes or until golden brown.
  9. Once out of the oven, let them cool for a few minutes before sprinkling with powdered sugar, if desired. Serve warm and enjoy!

Notes

Store any leftovers in an airtight container in the refrigerator for 2-3 days, or freeze for up to 2 months. Reheat from frozen at 350°F (175°C) for 15-20 minutes.
