Preparation
- Preheat your oven to 375°F (190°C).
- Roll out the pie crusts on a lightly floured surface until thinner.
- Cut the crust into small squares (about 3-4 inches) using a sharp knife or pizza cutter.
- In a medium bowl, combine the chopped cherries, sugar, cornstarch, vanilla extract, and lemon juice. Mix well to coat the cherries.
- Spoon a small amount of the cherry mixture onto one corner of each square, being careful not to overfill.
- Fold the dough over to form triangles and press the edges securely to seal. You can use a fork to crimp the edges.
- In a small bowl, whisk the egg and brush it over the tops of the bites for a golden finish.
- Place the bites on a baking sheet lined with parchment paper and bake for 18-20 minutes or until golden brown.
- Once out of the oven, let them cool for a few minutes before sprinkling with powdered sugar, if desired. Serve warm and enjoy!
Notes
Store any leftovers in an airtight container in the refrigerator for 2-3 days, or freeze for up to 2 months. Reheat from frozen at 350°F (175°C) for 15-20 minutes.
