  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt

  • 1 cup granulated sugar
  • 0.5 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
Main Add-ins
  • 1.5 cups grated carrots
  • 0.5 cup chopped walnuts optional
  • 0.5 cup raisins optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, and salt until well combined.
  3. In another bowl, mix the granulated sugar, vegetable oil, eggs, and vanilla extract. Whisk until thoroughly combined and smooth.
  4. Gradually add the wet ingredients to the dry mixture, stirring gently until just combined to avoid overmixing.
  5. Fold in the grated carrots and, if using, the chopped walnuts and raisins.
  6. Pour the batter into a greased 9x5-inch loaf pan and smooth the top.
Baking
  1. Place the loaf in the preheated oven and bake for about 50 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow the loaf to cool for at least 10 minutes in the pan before transferring to a wire rack to cool completely.

Notes

Consider using whole wheat flour for a healthier option or unsweetened applesauce in place of some oil. Check for doneness a few minutes before the recommended baking time.
