Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, and salt until well combined.
- In another bowl, mix the granulated sugar, vegetable oil, eggs, and vanilla extract. Whisk until thoroughly combined and smooth.
- Gradually add the wet ingredients to the dry mixture, stirring gently until just combined to avoid overmixing.
- Fold in the grated carrots and, if using, the chopped walnuts and raisins.
- Pour the batter into a greased 9x5-inch loaf pan and smooth the top.
Baking
- Place the loaf in the preheated oven and bake for about 50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the loaf to cool for at least 10 minutes in the pan before transferring to a wire rack to cool completely.
