Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt until well combined.
  3. Create a well in the center of the dry ingredients and pour in the vegetable oil and eggs. Mix until just blended—don’t overmix!
  4. Fold in the grated carrots, walnuts (if using), and vanilla extract. The batter will be quite thick, which is perfect!
Baking
  1. Pour the batter into the prepared baking pan, smoothing out the top.
  2. Bake for about 40-50 minutes or until a toothpick inserted into the center comes out clean.
  3. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  4. Slice and enjoy!

Notes

For a healthier twist, substitute sugar with coconut sugar and vegetable oil with applesauce or yogurt. Keep an eye on the cake to avoid overbaking.
