Preparation
- Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt until well combined.
- Create a well in the center of the dry ingredients and pour in the vegetable oil and eggs. Mix until just blended—don’t overmix!
- Fold in the grated carrots, walnuts (if using), and vanilla extract. The batter will be quite thick, which is perfect!
Baking
- Pour the batter into the prepared baking pan, smoothing out the top.
- Bake for about 40-50 minutes or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Slice and enjoy!
Notes
For a healthier twist, substitute sugar with coconut sugar and vegetable oil with applesauce or yogurt. Keep an eye on the cake to avoid overbaking.
