Ingredients
  

For the Salmon
  • 2 pieces salmon fillets Fresh or frozen, thawed
  • 2 tablespoons Cajun seasoning Store-bought or homemade
  • 2 tablespoons olive oil For cooking
  • Salt and pepper to taste
For the Avocado Salsa
  • 1 piece avocado, diced Ripe
  • 1 piece tomato, diced Fresh
  • 1/4 piece red onion, diced
  • 1 tablespoon cilantro, chopped Fresh
  • 1 piece lime Juice of 1 lime for salsa, juice of 1 lime for serving

Method
 

Preparation
  1. Pat the salmon fillets dry with paper towels for better seasoning adhesion.
  2. Rub Cajun seasoning over the salmon fillets and add salt and pepper to taste. Let marinate for about 10 minutes.
Cooking
  1. Heat olive oil in a skillet over medium-high heat.
  2. Once the oil is hot, place the salmon fillets skin-side down and cook for 4-5 minutes until golden brown.
  3. Flip the salmon and cook for another 3-4 minutes until fully cooked through.
Making Avocado Salsa
  1. In a bowl, combine diced avocado, tomato, red onion, cilantro, and the juice of 1 lime. Season with salt and pepper to taste and mix gently.
Serving
  1. Plate the cooked salmon and top generously with the avocado salsa. Squeeze with remaining lime juice before serving.

Notes

For milder seasoning, substitute Cajun seasoning with a blend of garlic powder, paprika, and black pepper. Store leftovers in an airtight container in the refrigerator for up to 2 days.
