Preparation
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper or a silicone mat.
- In a medium bowl, combine the brownie mix, vegetable oil, and eggs. Stir until well blended; the dough will be thick and sticky.
- Fold in the chocolate chips or nuts if using.
- Using a cookie scoop or spoon, drop tablespoon-sized dollops of the dough onto the prepared baking sheet, leaving space between each.
- Bake for 12-15 minutes or until the edges are set but the centers are still soft.
- Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for 3-5 days or freeze for up to 3 months. Reheat in the microwave for a few seconds when ready to enjoy.
