  • 1 box brownie mix Ensure halal-certified.
  • 1/3 cup vegetable oil Can substitute with melted coconut oil.
  • 2 large eggs Can replace with flaxseed meal for a vegan option.
  • 1 cup chocolate chips Optional, for extra chocolatey flavor.
  • 1/2 cup nuts Optional, can add texture.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper or a silicone mat.
  3. In a medium bowl, combine the brownie mix, vegetable oil, and eggs. Stir until well blended; the dough will be thick and sticky.
  4. Fold in the chocolate chips or nuts if using.
  5. Using a cookie scoop or spoon, drop tablespoon-sized dollops of the dough onto the prepared baking sheet, leaving space between each.
  6. Bake for 12-15 minutes or until the edges are set but the centers are still soft.
  7. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for 3-5 days or freeze for up to 3 months. Reheat in the microwave for a few seconds when ready to enjoy.
